What are bitter substances?
Bitter substances are substances with a bitter taste that plants use as a protective mechanism against predators. Because many toxins also have a high bitter value, small herbivores such as caterpillars or snails avoid these plants. In contrast, other animals, such as sheep, instinctively eat certain bitter herbs when they feel unwell. For us humans, too, there are natural solutions to various health problems in the form of "bitter herbs".

Bitter – a characterful flavor.
Bitter is a unique flavor that is not immediately appreciated by everyone. Each person perceives bitterness differently, depending in part on the number and type of bitter receptors. This information is already laid down in our genes. However, the individual taste may change over time, and the preference for bitterness can be developed and trained through the regular enjoyment of bitter substances.

Bitter substances and digestion
Bitter substances are excellent digestive aids. As soon as our tongue registers bitterness, the digestive organs begin their "warm-up". Neural and hormonal processes stimulate the production of gastric juice, bile, and pancreatic secretion, which promotes the digestion of proteins, carbohydrates, and fats. They also stimulate intestinal activity – including intestinal movement, blood flow and nutrient uptake – and liver metabolism. Bitter substances increase the desire for food due to their digestive stimulating effect, especially in the case of loss of appetite.

Bitter substances and slimming
Bitter substances are also excellent figure flatterers, as they effectively counteract hot hunger attacks. When we consume bitter substances, our taste receptors react immediately due to evolution. Because many poisonous plants taste bitter, the bitter taste leads to the release of the hormone cholecystokinin, which acts as a natural food brake. Admittedly, it may seem unusual to resort to arugula, grapefruit and similar foods when craving sweets or junk food – yet this is a successful way to combat cravings.
Recent studies also indicate that bitter substances can intervene in our metabolism and help with weight loss via various mechanisms. These include regulating blood sugar levels and increasing energy consumption.
